Recipes: Red Rooibos Iced Tea

Ingredients:
2 quarts pure water
2 red rooibos tea bags (about 2 tbsp loose leaf tea)
natural sweetner
Directions:
Bring 2 quarts of water to a boil. Add 2 red rooibos tea bags and simmer on
medium for 10 - 30 minutes. Remove tea bags. Let tea cool. Pour in pitcher, add
natural sweetener and stir. Place in the refrigerator. Use within 1 week.

Rooibos is becoming more popular in Western countries particularly among
health-conscious consumers, due to its high level of antioxidants such as aspalathin
and nothofagin, its lack of caffeine, and its low tannin levels. Rooibos also contains a
number of phenolic compounds, including flavanols, flavones, flavanones, flavonols,
and dihydrochalcones. "Green" rooibos has a higher antioxidant capacity than fully
oxidized rooibos. It carries a malty flavour somewhat different from its red

Note: Although rooibos can be brewed for 3-4 minutes, many tea experts
recommend brewing rooibos for at least 10 minutes. Research shows that it takes
about 10 Min. for the antioxidants in rooibos to be fully dispersed in the water. In
South Africa Rooibos is simmered in the pot for 30 min. It is then strained and
served hot or over ice. A coffee maker can also be used to prepare rooibos tea.
Green rooibos tea can be used instead of red rooibos tea.
